Weekend Chef: making sushi at home!

I love sushi and had a hankering to make some at home recently. I am familiar with most of the ingredients, but was not sure what was sushi quality fish.

So I took Chef Thomas Reese, head chef at Piranha Killer Sushi in Flower Mound, on a sushi-shopping trip at Central Market Fort Worth to show me what ingredients I needed to pick up to make sushi at home. Luckily, Central Market carries everything, including the fish. The sushi0grade fish at Central Market is in the frozen seafood section and is not really labeled sushi; actually, it is almost hidden. If you can’t find it, ask someone at the seafood counter.

After shopping. we shot some videos upstairs in the Central Market kitchen, with Chef Reese demonstrating how to prep the fish and make California rolls, hand rolls and Nagiri.
