Then, the Flying Fish.
Now -- the Moth?
Shannon Wynne's newest bar and restaurant is open in the design district of Dallas, west of Stemmons Freeway near downtown.
It's called the Meddlesome Moth.
The chef is Chad Kelley from Oceanaire, and customers are already talking about the shrimp and grits with jalapeño gravy.
The Moth is a pub with a stepped-up menu, including a grass-fed burger or roast chicken with cornbread and mustard greens.
The menu also offers a choice of modern meat pies -- including a rabbit pie.
The decor includes the stained-glass windows of Elvis and Chuck Berry that were salvaged from the original Dallas location of the Hard Rock Cafe.
"We wanted to take the Flying Saucer's beers and add a chef-driven menu," Wynne said.
He was one of the first Dallas restaurateurs to add locations in Fort Worth. But he said he's not planning a second Moth yet.
The Moth is open nightly for dinner and opens for lunch beginning Tuesday. Look for it at 1621 Oak Lawn Ave. at Hi Line Drive; 214-628-7900, www.mothinthe.net.
Paco & John Mexican Diner is now a dinner diner again.
The little Mexico City-style grill from Saint-Emilion owner Bernard Tronche is now open six nights a week. And yes, it's still BYOB.
New dinner specials include a pork tenderloin in mole or chicken poblano.
The breakfast and lunch menus offer tacos and enchiladas in guajillo or tomatillo salsa.
If the name Paco & John rings a bell, another writer recently described the tiny cafe as the home of some of Fort Worth's best guacamole.

J&J Oyster Bar, for 35 years the definitive seafood shack in the Fort Worth Cultural District, is building a second location in Burleson.

We're still watching for the two newest restaurants in the West 7th shops in Fort Worth.
Brownstone, the new restaurant from Top Chef star Casey Thompson of Dallas, is now on track to open in June at 840 Currie St.
Same for Patrizio, the Fort Worth location for the Highland Park favorite. A Fireside Pies will follow. Both will be in the 2900 block of Crockett Street near Tillman's, Terra Mediterranean Grill and Bailey's Prime.
In Ridglea, "Ray" Jumera's new Ray's Steakhouse & Seafood will open in about two weeks; 3206 Winthrop Ave.
A new Fuzzy's Taco Shop will open in about two weeks in Weatherford; 1217 S. Main St., 817-613-TACO (8226).
