Chopped beef sandwich, Sonny Bryan’s, Dallas

Best Barbecue Item

The only Sonny Bryan's you should ever dine at is the original, located on Inwood Road, near UT Southwestern and Parkland Hospital, where it’s been operating for nearly fifty years

Find it: 2202 Inwood Rd., Dallas; 214-357-7120; www.sonnybryans.com

The dish: There are numerous Sonny’s locations throughout the Metroplex, but the only one you should ever dine at is the original, located on Inwood Road, near UT Southwestern and Parkland Hospital, where it’s been operated for nearly fifty years. You squeeze into little old school desks or jockey for a spot at the outdoor picnic tables and then carefully unwrap the white paper surrounding what is one of the finest gastronomic events in the Lone Star State: biting into a perfectly built chopped brisket sandwich. It’s a particularly good place to take your Yankee friends: One bite and they’ll become instantly followers of the cult of Texas barbecue.

Don't wander away without also trying: The onion rings, mondo bangles of sweet white goodness with just a touch of crisp still at the core, beneath opaque, crisp jackets of gold.

"It’s a particularly good place to take your Yankee friends: One bite and they’ll become instantly followers of the cult of Texas barbecue."

You should know: The joint closes at 4 p.m. on weekdays and 3 p.m. on Saturday, and it’s not unusual for some of the smoked goodies to be gone before that. It’s closed Sunday, but you can stand outside the empty building and just smell the wood-smoke aroma, if you like.

Honorable mentions: Brisket, Angelo’s, Fort Worth; Jalapeno sausage, Railhead, Fort Worth.
