The dish:Longish and on the skinny side, these skins-on babies come tucked inside an old-fashioned paper envelope, surrounded by a tangle of grilled onion tendrils. Perfectly seasoned, you won’t need salt or pepper (though a little barbecue sauce on top tastes just fine). The fries are worth to trip to the drive-through alone. Ever better, though, is when they’re paired with an ice-cold beer and a warm afternoon on the patio.

Don't wander away without also trying: The Railhead is rightly famous for its ribs, but keep in mind that said ribs don’t last all evening. Smart people get there by 7 p.m. at the latest or risk being told, “We’re out for the day.”

You should know: Weekend crowds can be completely insane at the Fort Worth shop, so plan accordingly.
